Hello, i’am a novice in pollination, i don’t understand how the recipes works, because it seems that i can’t load any of them.
Am I missing something?

In order to be able to use a Recipe you need to add the recipe to the project first. See here for more information:
Once you add the recipe to the project, you can access them from the dropdown.
